Urschel Model M

The Model M is a two-dimensional cutting machine, meaning the product is cut simultaneously along two planes – through the use of circular knives and crosscut knives, it can produce precise dices, strips, as well as shreds or grated product, depending on the cutting set installed. This design delivers a uniform piece size with minimal waste and limited product deformation – which matters especially when working with delicate or lightly frozen raw materials.

The machine is supplied as standard with a 6.35 mm circular knife set, though the overall cutting size range is much broader: circular knives allow cuts from 3.2 to 38.1 mm, while crosscut knives range from 3.2 to 76.2 mm, giving considerable flexibility in matching piece size to a specific product range.
